Grilled Tofu/Shrimp/Chicken with Chilled Peanut Noodles

1# Firm Tofu, Peeled Shrimp or Boneless Chicken Breast or Thighs
½ cup Hoisin Sauce
3 tbl canola oil
12 oz. Spaghetti
3 cucumbers
2 carrots
1 bunch scallion green onions
1 cup whole cilantro leaves
1 cup frozen edamame beans, thawed

For Peanut Sauce:

1 cup creamy or chunky 
peanut butter
Juice of 1 lime
2 tbl brown sugar
1 clove garlic, grated
½ inch piece fresh ginger, grated
½ cup warm water

Preparation Instructions

1. Make the peanut sauce: In a mixing bowl, combine the peanut butter, lime juice, brown sugar, grated garlic, grated ginger, and warm water. Whisk until smooth and creamy. Add a little more warm water if needed to loosen the sauce to a pourable consistency.

2. Cook the spaghetti in a large pot of salted boiling water until just tender. Drain, rinse under cold water, and drain well again. Toss lightly with a small amount of canola oil to prevent sticking, then chill until ready to use.

3. Prepare the vegetables: Cut the cucumbers and carrots into thin strips or julienne. Slice the scallions thinly on a bias. Pick the cilantro leaves and keep them whole. Make sure the edamame beans are fully thawed.

4. Prepare the protein: Cut the tofu, shrimp, or chicken into portions suitable for grilling. Toss with the hoisin sauce and canola oil until evenly coated. Let marinate briefly while the grill heats.

5. Heat a grill or grill pan over medium-high heat. Grill the tofu, shrimp, or chicken until nicely marked and cooked through. Shrimp should be firm and opaque; chicken should reach an internal temperature of 165°F; tofu should be heated through with crisp edges.

6. In a large bowl, toss the chilled noodles with enough peanut sauce to coat. Fold in the cucumbers, carrots, scallions, cilantro leaves, and edamame.

7. Transfer the peanut noodles to a platter or individual bowls. Top with the grilled tofu, shrimp, or chicken. Drizzle with extra peanut sauce if desired and serve chilled or at room temperature.
